It was a big year, but with an earlier Sunday afternoon start, our 2025 edition really took the cooking to a new level. Easily some of the greatest dishes in chilli night history, 2025 was a triumph with the hurried nature of the last few making way for a truly classic chilli night.

Hot honey glazed Brussel sprouts with aged Camembert paired with Cupio chilli rose (Bryce)
An incredible fusion of flavours with a great kick.
Smoked Texas twinky in prosciutto with chilli spiked filling paired with Torbrek 2015 Woodcutters Shiraz (Bryce)
The perfect marriage of spice and a delicious creamy filling. Easily a top five dish of all time.
Caribbean jerk chilli low and slow spare ribs (six hour cook) with mango chilli salsa, lime chilli butter corn paired with White Oat Distillery Mango Chilli gin (Stephen)
Fantastic flavour, but too light on the chilli. A win on taste, but a fail on spice.
Candied habenero, pistachio chilli crunch with mango coconut lime, paired with 2020 Château Suduiraut Lions de Suduiraut Sauternes (Tim)
Incredible flavours with the crunch pairing perfectly with the candied chilli.
Easily one of the greatest chilli nights, filled with exceptional cullinary delights.
