2023 (Interim)

Bryce found himself back in Brisbane for a couple of weeks, so we took the opportunity to slip in an interim chilli night, just in case the opportunity doesn't arise closer to Christmas.

Cuisine:
Smoked bbq brisket Bao with chilli lime coleslaw and mango, cinnamon whiskey and habenero sauce. Served with Chilli peach rum cocktail (Stephen)

A delicious start to the night with a stunning mango chilli sauce.  

 

Roasted swordfish with chilli turmeric & French Chardonnay (Tim)
Swordfish steaks were absolutely delicious with just the right amount of chilli. 

 

Banana fritters with chilli custard and passionfruit (Bryce)
In what was sure to be either the big win or big loss for the night, Bryce's chilli custard was the hit and will be remembered as an iconic chilli night dish. Based on his chilli oil which was infusing for years, the custard was the perfect chilli hit to accompany the banana.
